Applesauce Carrot Cake

2 3/4 cup of flour
3 teaspoons of soda
1 teaspoon of salt
3 teaspoons of cinnamon
1 teaspoon of nutmeg
4 eggs
3/4 cup of oil
2 cups of sugar
1 teaspoon of vanilla
15 ounces of applesauce
3 cups of shredded carrots
1 cup of raisins
1 cup of chopped walnuts

Mix flour, soda, salt, and spices in mixing bowl. Set aside. Beat eggs in another bowl; stir in oil, sugar, and vanilla. Add applesauce and carrots; mix well. Add this mixture to flour mixture, stirring just enough to moisten. Fold in raisins and walnuts. Half of nuts can be sprinkled over top, if desired. Pour into greased 9 x 13 inch pan. Bake about 45 minutes at 350ºF. When cool, frost with cream cheese frosting.
