Asian Beef Wraps
Makes 4 servings
1 cup Instant Rice
8 (6-inch) soft flour tortillas
2 teaspoons seasoned stir-fry oil
1/2 pound thin boneless beef sirloin steak, cut into 2-inch strips
1/2 package (16 ounces) frozen stir-fry peppers and onions
1/4 cup stir-fry sauce
2 tablespoons water
1/4 cup thinly sliced green onions
Cook rice according to package directions; keep warm.
Heat tortillas according to package directions; keep warm.
Heat oil in large skillet over medium-high heat until hot. Add beef; stir-fry 4 minutes or until no longer pink.
Add peppers and onions; stir-fry 1 minute. Stir in stir-fry sauce and water. Reduce heat and simmer gently 6 minutes, stirring frequently. Remove from heat.
Place 1/4 cup cooked rice in center of each tortilla; top with 1/4 cup beef mixture and about 1-1/2 teaspoons green onions. Fold in both sides of tortillas; roll up tightly from bottom, keeping filling firmly packed. Slice each wrap diagonally into pieces.
