Baked Bananas a l’Orange

(6 servings)

3 firm ripe bananas
2 tsp cornstarch
2 tbsp granulated sugar
1/3 cup fresh orange juice
1 tbsp butter
1 tbsp brown sugar
1/3 cup shredded coconut
Whipped cream, or vanilla ice cream (optional)

Preheat oven to 375 F.

Peel bananas and cut crosswise and lengthwise into halves. Arrange in buttered shallow baking dish.

Combine cornstarch, granulated sugar and orange juice. Pour mixture over bananas, coating well. Dot with butter and sprinkle with brown sugar and coconut.

Bake for 30 minutes, or until bananas are tender and sauce is slightly thick. Serve topped with whipped cream, or ice cream, if desired.
