Baked Onions with Pork and Scallions

(4 to 8 servings)

4 large onions
3 tbsp butter
1 garlic clove, minced
1/4 lb ground lean pork
1/2 cup soft fresh breadcrumbs
1/4 cup chopped scallions, green part included
1 tbsp chopped parsley
Salt and freshly ground pepper to taste

Preheat oven to 350 F.

Peel onions and cut them into halves crosswise. Scoop out part of the inside but leave a thick shell and cavity for stuffing. Chop the scooped-out onion.

Melt 1 tbsp of butter and cook the chopped onion and garlic in it griefly, stirring.

Combien pork, crumbs, scallions, parsley, salt and pepper in a mixing bowl. Add the onion and garlic mixture and blend well. Sprinkle the 8 onion halves with salt and stuff them with equal amounts of the filling.

Rub bottom of a baking dish with the remaining butter. Arrange the stuffed onions on it and cover closely with foil.

Bake for 1 hour, until onions are tender and meat is thoroughly cooked.

Serve as is or, if desired, with a tomato sauce.
