BANNOCK (Scottish)

3 c. flour
1 t. salt
2 T. baking powder
1 T. sugar
2 T. lard
3 c. cold water

Mix flour, salt, baking powder, sugar and lard. Stir in enough cold water to make a thick batter that will pour. Combine quickly until smooth and pour at once into a greased baking pan. Fill the pan to half-full. Bake in a 400* F. oven for 35-45 minutes.
Serve with butter and honey or a wild berry jam.
