Beef with Sour Cream

(6 servings)

1/3 cup flour
1 tsp salt
1 tsp freshly ground pepper
2 lbs boneless chuck, cut into 1-inch cubes
1/4 cup vegetable oil
1 cup tomato juice
3 tbsp grated onions
1/2 tsp thyme
1/2 bay leaf
1 (10 oz) pkg frozen peas
1 cup sour cream
1 tbsp horseradish

Mix flour, salt and pepper. Dred meat in seasoned flour. In Dutch oven, heat oil, add meat and brown quickly on all sides. Add tomato juice, onions, thyme and bay leaf. Cover tightly and simmer gently about 2-1/4 hours, or until meat is tender.

Add peas and simmer about 10 minutes, or until done. Stir in sour cream and horseradish and heat but do not let boil.
