Buttermilk-Bacon Mashed Potatoes
1/4 cup crumpled cooked soy or turkey bacon
2 tablespoons chopped green onions
salt and pepper to taste
3 medium Russet potatoes
6 tablespoons low-fat buttermilk
Prepare potatoes as directed in Basic Mashed Potatoes to Serve Four. Mix in buttermilk, bacon and onions. Season with salt and pepper.
