Candied Parsnips

Candied Parsnips

(6 servings)

6 parsnips, peeled
1/2 cup brown sugar, firmly packed
1 tsp salt
1/2 cup orange juice
1 tsp grated orange rind
4 tbsp butter

Boil parsnips until almost tender, about 15 minutes. Drain and slice.

Preheat oven to 375 F.

Arrange parsnips in layers in greased casserole, sprinkling layers with some of the sugar, salt, juice and rind and bits of butter.

Bake 25 to 30 minutes.
