Catfish, Southern Style

My husband caught enough catfish yesterday for a nice dinner today. I soaked them in salt water overnight to kind of brine them and get rid of all the “undesirable” residue. They will be cooked in peanut oil after being dredged in a mixture of cornmeal, flour, cayenne pepper & red pepper flakes (and served with hot sauce, of course).

On the menu will be fried catfish, cajun hushpuppies, creamy coleslaw, spicy fries and lots of ice tea.
