juice of 1 lemon apx 1/4 cup
2 cloves of garlic minced
1/4 cup olive oil
shredded or grated parmesian cheese (fresh)
fresh ground pepper
pour apx 1 tsp salt in a salad bowl to this add clushed garlic and using a spoon work the two together and to this apx 1/4 tsp frest ground pepper again work with spoon add lemon juice and olive oil and keep working with fork.
Take one blanched egg. I usually take a large cup of water and place in microwave for apx 4 minutes until boil remove add egg to water and blanch for apx 30 seconds. Break egg over other ingredients in sald bowl
and wisk be sure to mix thoroughly. Add parmesian cheese and mix with a wooden spoon be sure to mix.
Tear lettuce into bite size pieces
and toss with sauce sprinkle more cheese on top and top with croutons.
You can also add anchovies chopped or whole on top I prefer without.
Enjoy you can adjust any of the ingredients as you prefer I prefer more garlic.
