Chicken Kinda Kiev

Serves 4

Ingredients:

1/4 cup egg substitute
3 Tbsp bread crumbs
1/4 cup Parmesan cheese
1/2 tsp, rounded, garlic salt
1 tsp paprika
4 (1 – 1.25 lb total) chicken cutlets (very thin chicken breasts)
garlic powder
salt
pepper
dried parsley, finely ground
2 Tbsp butter

Preheat the oven to 350°. Spray an 11x7” baking dish with butter-flavor cooking spray. Put the egg substitute in a small bowl. Mix the bread crumbs, Parmesan, garlic salt and paprika in a separate medium shallow bowl. Sprinkle each chicken cutlet on one side with garlic powder, salt, pepper, and parsley. Cut the butter into 2 slices. Cut each slice crosswise into two rectangular pieces. Put one piece of butter on each cutlet about 1” from the wide end. Fold in edges of chicken and roll to encase the butter. Secure with a toothpick. Coat each roll in the egg substitute, then coat with the crumb mixture. Place in the baking dish. Spray very lightly with the butter-flavor cooking spray. Bake for 35 minutes.
