Serves 10 (Appetizer)
1 lb. boneless. skinless chicken breast, smoked and diced
1 tbsp. Italian seasoning
1 tbsp. olive oil
8 pieces of Phyllo dough
salt and pepper
Brie Cheese, sliced thin

- Preheat the oven to 350F. Combine the smoked chicken with the spices, olive oil and salt and pepper in a small bowl and set aside.
- Place one piece of the Phyllo dough on your work surface and brush with butter. Top with another piece of dough and brush with butter and repeat for a total of four layers finishing with brushed butter. Place a strip of Brie Cheese on the lower one sixth of the Phyllo topped with smoked, diced chicken.
- Roll the phyllo dough up lengthwise, tucking the chicken, Brie mixture inside as you roll. Pinch the ends of the roll together and place seam side down on a baking sheet. Brush the roll-up with butter. Bake for 10 to 15 minutes, or until golden brown. Remove and set aside.
- Slice into 1-inch slices and serve.
