Chilled Lobster and Smoked Salmon Timbale with Micro Sprouts

1 cup diced Maine lobster meat
½ cup diced smoked salmon
1 tbsp diced red onion
2 tbsp sliced chives
2 tbsp diced yellow tomato
½ tsp truffle oil
Juice from one lemon
TT Salt and Pepper
½ cup micro sprouts

Place the lobster meat, salmon, red onion, chives and yellow tomato in a bowl. Add the juice from lemon, truffle oil and season with salt and pepper. Place some of the mixture in a 3-inch ring mold, remove the mold and top with micro sprouts.
