Creamy Italian Dressing?

I’m looking for one that doesn’t use mayonaise, yohgurt, cottage cheese, etc. – something a little more authentic. Something that’s creamy from emulsifying the dressing, not an added ingredient. Anyone have any recipes?

Tofu and bananas fall into the “not authentic” catagory too, and I don’t think any self respecting italian would make a dressing out of mazola and distilled vinegar… I saw those on the web too. Anyone else have any ideas?

Seen the following ingredients stated in an authentic creamy italian dressing. Not sure if this is what you want, but here it is (no quantity of ingredients available):

gorgonzola cheese
red wine vinegar
extra virgin olive oil
oregano
onion

I make my own creamy Caesar dressing in my blender and it turns out white and creamy as it emulsifies.

1/4 cup or so of extra virgin olive oil
1 egg yolk
1 tsp dry mustard
1 or 2 tbsp lemon juice
few drops Worcestershire sauce
garlic cloves (depends on how garlicky you like it)
dash pepper
1 tbsp grated Parmesan cheese (optional)
anchovies (optional)

** I “eyeball” everything. Blend and taste, and adjust.
