DEPRESSION ERA EGGS IN A CIRCLE
This was born out of the piece of toast (see Depression Era Tasty Toast recipe) with a hole cut out of the center. One side was browned, turned, spread with lard and an egg was dropped in the center and seasoned. The toast was turned once more to cook the egg on both sides. The center of the piece of toast was browned also for an extra nmorsel of goodness.
This lunch was generally made for a quick snack when nothing else could be found to eat.
