DEPRESSION ERA FRENCH BREAD PUDDING

Cube 6 to 8 slices of stale bread. Pour over about 1/2 c. salted water. Mix well by hand and press to dry and drain.

Beat 2 eggs well

Add:
1/4 c. sugar
1/2 c. seeded raisins
and the bread

Scald:
1 qt milk

Add:
1/2 t. cinnamon
1 t. lemon extract

Pour over bread and stir well. Place into 2 qt. casserole baking dish and place in pan of hot water. Bake at 250* - 350* F. for 45 to 60 minutes. SErve hot, warm or cold. Serve with light cream or a dollop of whipped cream.
