DEPRESSION ERA FUNNEL CAKES

This treat was made by the Dutch on Sunday afternoons. they were eaten hot and fresh and were popular in the 1930’s because they didn’t take much sugar to make.

Beat:
1 egg

Add:
2/3 c. milk

Sift:
1 1/3 c. flour

Add:
2 T. sugar
1/4 t. salt
1 t. soda
3/4 t. baking powder

Add: to milk and egg mixture. Fry in hot fat at 375* F. using funnnel with 5/8-inch opening. Holding finger over funnel bottom measure 1/4 c. batter at a time. Swirl in a circle as batter runs from funnel. These were good dusted with powdered sugar.
