DEPRESSION ERA HEAD CHEESE
Cook until meat falls off bones in salted water, one hog’s head and one hog’s tongue. Shred and season with salt and pepper, or with chili powder. Pack tightly in bowl, cover and weigh it down. Let stand for 3 days in a cold place. Slice and serve.
Some suppers consisted of milk, bread and head cheese.
Also made by cooking the bones and any meat from a freshly butchered pig’s head. Sage, salt and pepper were the seasonings used.
