Pre-heat oven to 350
In a large bowl cream together:
3 pkg Cream Cheese (room temperature)
1 C Sugar
Juice of Â½ lemon (or bottled juice to equal Â½ lemon)
Yolks of 4 lg or 5 medium eggs. Mix until creamy
Egg whites until whipped. Add to cream cheese/yolk mixture.
In egg whites. Do not overmix
Over Graham cracker crust into springform pan.
45 minutes or until light brown on top and cake tester comes out clean
5 minutes & loosen bottom with a plastic knife.
Graham Cracker Crust
1- Â½ C ground graham craker crumbs
Â½ C sifted powdered sugar
6 T melted butter
Line bottom of pan with foil. Mix all ingredients together and form into bottom of springform pan.
