Fish Chowder

Here’s a chowder that my mother makes. My daughter doesn’t care for fish but really liked this dish…we didn’t tell her there was fish in it and she couldn’t tell! When we asked her if she knew what was in it, she said it was good and didn’t want to know what was in it. LOL Can be done with pike or
pickerel too. This dish is even better the next day!

Fish Chowder

2 medium onions, chopped
2 medium peppers (1 red, 1 green), chopped
2 cloves garlic, crushed
2 Tbsp butter or margarine
1 (796 mL) (28 oz) can tomatoes, broken up
1/2 Tbsp crushed thyme
1/4 tsp cayenne (optional)
2 medium potatoes, peeled and cut in 1/2-inch cubes
3 cups water
1 cup white wine (or water)
1 (250g) pkg of cream cheese, cubed
1 kg (2 lbs) fish fillets (haddock or cod), cut in chunks
1/4 cup chopped parsley
2 tsp salt
1/4 tsp pepper

In a large pot, sauté onions, peppers and garlic in butter until tender. Add tomatoes, thyme and cayenne; bring to a boil. Add potatoes, cover and simmer 10 minutes. Add water and wine; bring to a boil. Reduce heat; add cream cheese cubes and stir until cheese melts. Add fish and parsley; bring to
simmer; cover and cook 4 minutes or until fish flakes easily with fork. (Don’t overcook.) Stir in salt and pepper. Serve in warm bowls. 6-8 servings.
