Many of us enjoy using fresh ginger in many recipes instead of what I call “canned ginger.”
But of course - I do not use fresh ginger as frequently as many others do.
Usually fresh ginger is wrapped and stored in the refrigerator - which of course - doesn’t prolong its shelf life very long. I find that by wrapping and storing in the freezer, my ginger keeps much longer and is still very easy to grate for those recipes I want to use fresh ginger in. And it lasts much, much longer.
