FRUITED OAT THUMBPRINTS
Makes about 4-1/2 Dozen Cookies
1 -1/2 cups butter flavor crisco
1 cup firmly packed light brown sugar
1 tablespoon vanilla extract
2 -1/2 cups oats (Quick or Old Fashioned, uncooked)
2 cups all-purpose flour
1/2 teaspoon salt
1 -3/4 cups finely chopped pecans
2/3 cup fruit preserves
Heat oven to 350ÂºF.
Combine crisco and brown sugar in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg and vanilla.
Combine oats, flour and salt. Add gradually to creamed mixture at low speed. Beat until well blended. Shape into 1-inch balls. Roll in nuts. Place 2 inches apart on ungreased baking sheet. Press thumb in centers. Fill with preserves.
Bake at 350ÂºF for 12 to 15 minutes or until light golden brown. Remove to cooling rack. Cool completely.
