Garlic Bread

This goes great with any Italian dish, and is simple to make.

3/4 TBS garlic powder
1/2 tsp oregano
1/8 tsp basil
1/4 tsp dired minced garlic
1/4 TBS kosher salt
1/2 TBS parmesean cheese
1 stick butter, softened
1 loaf Italian bread

Preheat oven to 375 degrees. Combine spices in a mortar in pestle, and grind until the salt and minced garlic have been broken down and combined. If you don’t have a mortar and pestle, simply put the spices in a zip loc freezer bag, and beat with the flat side of a meat tenderizer or rolling pin until crushed and combined. Slice loaf in half length wise, and spread each half with a half stick of butter. Divide the spice mixture in half, and spread each half evenly over each piece of bread. Wrap each half in aluminum foil and bake for about 15 minutes. To crisp it up a bit, open the foil up and bake another 5 to 7 minutes. Enjoy!

Thanks for the garlic bread recipe its going to be a life saver. I am making cavatini for my husbands b-day and didnt have a good one to go with it.

A Healthier Garlic Bread

Who doesn’t love garlic bread? The trouble is, it’s usually chock-full of artery clogging saturated fat. You can make your own healthier, low fat version by simply roasting a head of garlic and spreading the pulp on a whole grain baguette.

Here’s how:
Preheat oven to 400 degrees
Take two heads of garlic and remove the papery outer layer
Slice approximately half an inch off the top of each head to expose the cluster of cloves
Place garlic, cut side up, on a foil-lined baking sheet or in a baking dish
Drizzle 1 teaspoon of extra virgin oil on top of each head of garlic
Bring up sides of foil and seal the garlic, or, if using a baking dish, cover it .Roast for 40-45 minutes
Allow to cool, then separate cloves and squeeze them to make a pulp. Mash until smooth.
Spread pulp on warmed or toasted baguette
For a creamier texture, you could blend garlic pulp with some softened fat-free cream cheese, or non-hydrogenated margarine.
