Garlicky Grean Beans

Fresh green beans and onions sautéed with garlic in olive oil make a simple side for family dinners or holiday celebrations.

INGREDIENTS:

8 ounces (1/2 pound/250 g) green beans, topped and tailed and cut into bite-sized lengths
1 yellow onion, peeled and finely sliced
¼ cup (60 ml) olive oil, preferably extra virgin
1 pinch salt
2 garlic cloves, minced or pressed
1 heaping tablespoon finely chopped fresh parsley

Cook the beans in boiling salted water for several minutes until they are al dente – thoroughly cooked with some resistance when you bite into them. Drain cooked beans thoroughly.

Heat olive oil in a large skillet until it shimmers. Sauté the onion in the oil until lightly golden brown.

Add the green beans and sauté them until just reheated. Stir in the garlic and salt. Garnish with parsley and serve immediately in a warmed serving dish.
