German Farmers Breakfast


1/2 lb. sliced bacon, cut into 1/2" strips
1/2 c. chopped cooked potatoes
2 T. chopped green pepper
2 T. chopped onion
3/4 t. salt
1/8 t. pepper
1/2 c. shredded cheddar cheese
6 eggs

Cook bacon over med. heat in lg. skillet until crisp; drain, reserving 3 T. drippings. Cook potatoes with bacon and next 4 ingredients in reserved drippings over med. heat until lightly browned, stirring frequently. Sprinkle with cheese; mix well. Break eggs into skillet. Cook over low heat until eggs are set, stirring constantly.

Makes 4 servings.
