Gorgonzola Cheese Sauce

4 Tbsp butter
1 small onion, very finely chopped
8 oz Gorgonzola cheese, chopped
4 oz Mascarpone cheese
3/4 cup heavy cream
freshly ground black pepper to taste

Stir the butter in a large sauce pan over medium-low heat until melted. Add the onion and saute for 3-4 minutes. Add the Gorgonzola, Mascarpone
and cream and stir carefully until blended and creamy. Remove from the heat and season with pepper to taste.
Makes about 2 cups

Great with pasta or gnocchi
