Ground Turkey

:shock: Does anyone have some good recipes for ground turkey I have only two and would like some variety in cooking this meat. Thanks :roll: :wink:

Turkey Hash

4 c of coarsely chopped cabbage
boiling water

1/2 lb ground turkey
14oz of canned tomatoes, with juice, broken up
3/4 tsp dried oregano
1/4 tsp onion powder
3/4 tsp salt
1/4 tsp pepper

Cook cabbage in boiling water until tender. Drain.
Fry ground turkey in non stick frying pan till it is not pink.
Add tomatoes, oregano, onion powder, salt and pepper. Add cabbage. Heat and stir until mixture is hot.

Turkey Loaf
3/4 c sour cream
2 lrg. eggs
1/2 c finely chopped onion
1/2 c finely chopped celery
1 c frozen peas. thawed
1 tsp salt
1/4 tsp pepper
pinch of poultry seasoning
3/4 c fine dry bread crumbs
2 lbs ground turkey

Mix first 9 ingredients in bowl. Add ground turkey and mix well. Pour into greased loaf pan. Bake at 350’F oven for 1 1/4 hrs

I use ground turkey as a substiute for ground beef in some recipies… I just add some steak sauce to give it a taste thats more like ground beef… It’s a good way to cut out some fat.

Turkey-Mushroom Burgers

Ground turkey is the standard lean alternative to ground beef–and a good one–but burgers made from it can be dry and bland. These turkey burgers are particularly moist and flavorful because mushrooms are used to extend the ground meat.

Nutrition note: Lean ground turkey breast has 110 calories and 1 gram fat per 3-ounce serving, compared to 193 calories and 11 grams fat in regular ground turkey (which may include leg meat and skin).

Start to finish: 1 hour
To make ahead: Prepare patties through Step 5. Wrap individually and refrigerate for up to 8 hours or freeze for up to 3 months. Thaw in the refrigerator before cooking.

Ingredients

2 slices whole-wheat sandwich bread, crusts removed, torn into pieces
8 ounces white mushrooms, cleaned
3 teaspoons olive oil, divided
1 medium onion, finely chopped
2 cloves garlic, minced
1/2 cup Scallion-Lemon Mayonnaise (see recipe), optional
1 pound lean ground turkey breast
1 large egg, lightly beaten
3 tablespoons chopped fresh dill
11/2 tablespoons coarse-grained mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
6 whole-wheat buns
Lettuce leaves & tomato slices for garnish
To make:

  1. Place bread in a food processor and pulse into fine crumbs. Transfer to a large bowl. Pulse mushrooms in food processor until finely chopped.

  2. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add mushrooms, onion and garlic; cook, stirring occasionally, until tender and liquid has evaporated, about 10 minutes. Add to breadcrumbs and let cool completely, 15 to 20 minutes.

  3. Meanwhile, prepare Scallion-Lemon Mayonnaise, if using.

  4. Heat grill to medium-high.

  5. Add turkey, egg, dill, mustard, salt and pepper to the mushroom mixture; mix well with a potato masher. With dampened hands, form mixture into six 1/2-inch-thick patties, using 1/2 cup for each.

  6. Brush patties with remaining 1 teaspoon oil. Grill until no longer pink in the center, about 5 minutes per side. (An instant-read thermometer inserted in the center should register 165°F.) Meanwhile, split buns and toast on the grill for 30 to 60 seconds. Serve burgers on buns, garnished with lettuce, tomato and Scallion-Lemon Mayonnaise, if desired.

1 1/2 pounds Shady Brook Farms© ground turkey breast
1 can mushroom soup
3 cups sliced crimini mushrooms(baby bellas)
1/2 pouch onion soup mix
3 tablespoons cornstarch
1 cup beef broth
3 sprays pam
1 8 ounce container sour cream

spray turbo cooker with butter flavored pam/or the olive oil
flavored

brown ground turkey in turbo cooker with valve closed on medium high
few minutes til fully browned

add in mushroom soup. baby bellas,

half of onion soup mix add in that as well simmer till all
ingredients are tender on medium high for about 5 minutes. may vary
according to your stove. with vent closed

thicken with beef broth and cornstarch make a cornstarch slurry
valve closed keep simmering takes bout 10-15 minutes to thicken add
sour cream in . turn down to low you dont’ want the sour cream to
boil cause it will curdle on ya…

Serving Ideas : Serve over hot rice/I use jasmine rice from my rice
cooker. OR can use hot buttered egg noodles. this goes good with
canned carrot slices and green beans mixture. and a green salad of
some sorts.

ground buffalo is also great too. On the weekend i made manicotti with ground buffalo and a white sauce. They were so yummy

Turkey Meatball Minestrone

1 lb ground turkey
2 cups chopped onion divided
1 cup seasoned bread crumbs
2 tsp minced garlic divided
1/2 tsp Italian seasoning
Vegetable cooking spray
1 cup celery chopped
2 tsp olive oil
2 Cans (14-1/2 ounces) no-fat chicken broth
1 Can (14 ounces) chopped tomato undrained
1 Can (8 ounces) chick peas
1 Can (8 ounces) cut green beans drained
1 tsp sage leaves
1 tsp basil
1 tsp parsley
1 cup dry rotini pasta

In medium bowl combine turkey, 1 cup onion, bread crumbs, 1
teaspoon minced garlic and Italian seasoning. Shape mixture into 36
meatballs. Place meatballs on baking pan (10 x 15 x 1 inch) sprayed
with vegetable cooking spray. Bake at 400 degrees (Fahrenheit) for
20 to 25 minutes or until meatballs are brown on outside and no
longer pink in center.

In 5-quart saucepan, over medium-high heat, saute remaining onion
and garlic with celery in olive oil for 5 to 7 minutes, or until
limp. Add chicken broth, tomatoes, chick peas, green beans, sage,
basil, and parsley.

Increase heat and bring mixture to boil; add rotini. Reduce heat,
cover and simmer for 15 to 20 minutes or until pasta is al dente.

Add meatballs and simmer 5 to 10 minutes, or until mixture is
heated throughout.

Servings: 6

Turkey Meatballs
If you haven’t tried using ground turkey instead of beef, this recipe could be a tasty introduction. These meatballs would be a welcome at a potluck supper. Ideal for a small electric casserole. Serve as a baked potato topping or over rice or noodles. Energy-saving tip: Make a double batch and bake them in the oven along with potatoes or rice.
