HAM FRITTERS WITH CREAMY SAUCE

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs, beaten
1/4 cup milk
1 tablespoon melted shortening
1 cup chopped cooked ham
hot vegetable oil
CREAMY SAUCE:
1/4 cup shortening
1/4 cup flour
2 cups milk
1 teaspoon salt
1 cup shredded cheddar cheese

  1. Combine flour, salt and baking powder; stir in eggs and milk. Add shortening and mix well. Stir in ham.

  2. Drop batter by tablespoon into deep oil heated to 375 degrees. Fry until golden, drain on paper towels. Serve hot with sauce. Yield: 2 dozen.

  3. CREAMY SAUCE: Melt shortening in pan over low heat. Add flour and salt, stir until smooth. Cook 1 minute. Gradually add milk, cook over medium heat until thickened, stir in cheese until melted. Serve over Fritters. Yield: 2 cups.
