Kretsch Loaf

1 lb of ground beef or 1/3 lb each of ground veal, pork and beef, 1 egg, 1/2 tsp garlic powder, 1 box of StoveTop Stuffing mix chicken flavor, 5 slices plain raisin bread ie King Kullen’s Raisin Bread - not Cinnamon Swirl or other fancy raisin bread, 4 TBs butter, salt, black pepper, 1/2 cup Maggi gravy or other beef gravy.

Preheat oven to 350 degrees. Prepare the stuffing mixture in its entirety and as directed on the package only use butter instead if possible. Only 1/2 of the stuffing recipe will be used here. Make sure the stuffing is soft all the way through, and fluffed with a fork. Put the ground meats and 1/2 the prepared stuffing mixture into a large bowl. Add the egg and the garlic powder as well.

Prepare the raisin bread in another bowl as follows:

To avoid crushing the raisin pieces, remove them by picking them out and placing them on the side. Take the bread slices and break them up into crumbs in a processor. After the bread is ground, put it in the large bowl with the ground meat for mixing. It is important to blend very well at this point. Using your hands, make sure all the flavors are as combined as possible and will not be discernible as individual tastes later. Make sure the mixture is smooth - add a little water if necessary to blend into a fine paste. Toss the raisin pieces in last and continue to blend. Put salt and black pepper on top after smoothing mixture into a loaf pan if you are not planning on using a mold and inverting later. I tried making this meatloaf in a variety of pan shapes with mixed results. See notes. Bake covered with foil for 1/2 hour. Then remove foil and cover with 1/2 cup of Maggi gravy, or any tasty beef gravy. See Little Neck Parkway Deli-Style Meatloaf for quick Maggi gravy recipe if desired. Loosely recover with the foil and place back into the oven for another 20 minutes to 45 minutes of cook time. If you use a pan smaller than the loaf pan, please shorten the bake time and adjust accordingly. Do not overcook or loaf will become rubbery. Bake until ‘just’ cooked. Serves 4.
