Layered Sweet Potato Delight
2 sticks butter or margarine, melted
2 cups flour
1 cup chopped pecans
1/2 cup powdered sugar
2 packages (8 ounces each) cream cheese, softened
1 small container whipped topping, thawed
2 cups powdered sugar
2 cups cooked, mashed sweet potatoes
Additional chopped nuts and whipped cream for garnish
Combine the melted margarine, flour, nuts and sugar. Mix well, then press into the bottom of a 13x9-inch baking pan. Bake at 375 degrees F for about 15 minutes or until lightly browned. Remove and cool about 10 minutes.
While the crust bakes, combine the cream cheese, whipped topping, powdered sugar and sweet potatoes in a large bowl. Mix well. Pour over cooled crust.
Top with additional chopped pecans and whipped topping. Cover and refrigerate until ready to serve.
