Lemon Volcano Pie
1/2 cup Butter 1/3 cup Lemon juice
2 tablespoons Grated lemon rind
1/4 teaspoon Salt
1 1/2 cups Sugar
3 Egg yolks
1 quart Vanilla ice cream
3 Egg whites
Melt butter in top of double boiler.
Add juice, rind,salt and 1 c. sugar.
Beat 2 eggs and 3 yolks thoroughly; gradually stir into butter mixture.
Cook over hot water, stirring constantly, until thick and smooth. Chill.
Allow ice cream to soften, then press half of the ice cream into pie shell.
Freeze; spread half of the lemon filling over frozen pie; freeze.
Repeat layers. Beat egg whites until foamy; add sugar gradually;
continue to beat until stiff. Spread on frozen pie, sealing edges; freeze.
Just before serving brown in 475 oven for 1-3 min.
