Meatball Soup

Everyone will love this soup!!! I lost the recipe for a while and thought I would never get to make it again…I tried and tried to remember all the ingredients. Well, finally located my recipe…It is a family favorite and not hard to fix. Perfect for a cold winter evening…

Meatballs:
1-1/2 lbs. ground beef
1 egg slightly beaten
3 tablespoons water
1/2 C. dry bread crumbs
1/4 teaspoons salt
1 tablespoon chopped parsley
2 tablespoons butter

Soup:
2 cups water
1 can (10-1/2 oz.) condensed beef broth, undiluted
1 can (1lb.,12oz.) tomatoes, undrained, chopped
1 envelope (1-3/8 oz.) dry onion soup mix
1 C. sliced carrots
1/4 C. chopped celery tops
1/4 C. chopped parsley
1/4 teaspoon black pepper
1/4 teaspoon dried oregano leaves
1/4 teaspoons dried basil leaves
1 bay leaf

To make meatballs, combine beef, egg, water, bread crumbs, salt and parsley. Mix lightly; shape into 24 balls. In 5 qt. Dutch oven, melt butter and brown meatballs, a single layer at a time, on all sides. Drain off fat; remove meatballs and set aside. To make soup, combine ingredients in same Dutch oven. Bring to boiling. Reduce heat; cover and simmer for 20 minutes. Add meatballs; simmer 20 minutes longer. Remove bay leaf. Yield: 6-8 servings about 2 qts. Just a hint you will want to double this receipe it is so good!! We sometimes tripple it.
