Mighty Meatloaf (Low Carb)


2 lbs lean ground beef
2 eggs
1 onion chopped**
3T fresh parsley(1 T dried)
1/4 c bread crumbs **Low Carb option see at left
1/2 tsp salt
1/4 c milk **
2 medium zuchinni, grated

2 green peppers, thinly sliced
8 oz sliced mushrooms
2 T oil
1 28 oz can crushed tomatoes

**For Low Carb:
-omit onion, use 1 tsp onion salt
-use 1/4 c crushed pork rinds OR make your own bread crumbs using Low Carb Bread
-subtitute cream and water to total 1/4c for milk
-don’t use too much sauce

Mix all ingredients together well. Put in large loaf pan or form into loaf and place in 9x13 pan.

Bake at 350F for 1 to 1 1/2 hrs or until done. Pour off fat if desired during cooking.

For Sauce: Saute peppers and mushrooms in oil. Add tomatoes. Season to taste(garlic powder, italian seasoning, pepper if desired)
Simmer 15 to 20 minutes.

Serve slice of meatloaf with sauce over top.Sprinkle with freshly grated parmesan.
