My favorite Jam Thumbprint Cookies

I found this somewhere on the internet, but can’t remember where…
These are soooo simple to make, but absolutely delicious. Give them a try!

Jam Thumbprint Cookies

3 sticks of butter at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all purpose flour
1/4 teaspoon salt
1 egg + 1 tablespoon of water, beater, for egg wash
7 ounces sweetened flaked coconut

Rasberry, apricot or any flavor you like jam.

Cream butter and sugar until combined, add vanilla. Mix in salt and flour. When dough comes together, dump on a floured surface, roll into a disk, wrap in plastic and chill for 30 min in the fridge.

Preheat over to 350 degrees F.
Divide the dough into 32 equal pieces (1 oz. or 1 1/4 inch balls). It easiest to do this by repeatedly dividing the dough into two equal parts. First divide it into two equal parts, then divide each of those into two equal halves and so on. Or you could weigh them make sure each is 1 oz…up to you. Once you have the little dough balls ready, dip each in egg wash, roll in coconut. Please them on an ungreased cookie sheet and press lightly with your thumb to make an indentation. Put 1/4 teaspoon of jam in each indentation. Bake 20 to 25 minutes untill the coconut is golden brown. Cool and serve.
