Orange Spiced Carrots

2-1/2 cups carrots, thinly sliced
3/4 cup water
1-1/2 cups orange juice
1 Tbsp brown sugar
1-1/2 Tbsp cornstarch
1/8 tsp ginger
1/8 tsp nutmeg
Chopped parsley, to garnish

Cook carrots in water, covered, until tender, 20 to 30 minutes. Drain. Combine remaining ingredients, except parsley, in bowl. Stir well. stir into carrots. Cook and stir till sauce thickens and bubbles. Sprinkle with parsley before serving.
