OVEN YAM WEDGES
Serve these with fried chicken or barbecued pork.
4 yams, cut into quarters
1 1/2 T. olive oil
Sea (or Kosher) salt
Preheat the oven to 425Â°F. Toss the cut yams with the
oil. Place on a cookie sheet and bake for 15 minutes. Turn
and bake for 15 minutes longer. Season with salt while still
hot. Serve warm.
