Oysters Rockefeller Microwaved
3 cloves of garlic…minced
3 green onions -n- 1/4 of stems…minced finely
1/4 cup of sour cream
1/2 cup celery tops…minced
1 dozen oysters in the half shell…scrubed clean…open
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
2 T. Butter …melted
Salt -n- Pepper
Dash of cayenne pepper
1 Fresh lemon
Mince garlic - gr. onion and stems-celery leaves finely-salt-pepper to taste…mix with sour cream.
Mix the cheese-bread crumbs-together with a little cayenne pepper-dash of salt. Set aside.
Scrub and clean the oysters well…if they do not open soak in salt water a few minutes. Remove the oysters from the shell. Place ina dish.
Using the first mix place 1 tsp. in the bottom of each shell. Place the oyster on top. Cover the oysters wit a spoonful or so of the celery mixture…
Take the 2nd mixture of bread crumbs-cheese -cayenne pepper …sprinkle over the top of oyster…Drizzle melted butter over each oyster.
Place oysters on a microwave-safe plastic or glass dish large enough to hold all. (Ideally you would place a bed of Rock Salt with a little water over the rock salt as to have a steam effect, microwave that for a minute). Remove rock salt from microwave and place the oysters on top of the rock salt…return to microwave on high for about 6 minutes…if your microwave turns. If it doesn’t turn …than go for 4 minutes and turn the plate 180 degrees microwave for another 2 minutes on high.
Serve hot …cut thin lemon wedges…squeeze over the top.
Makes an appetizer for about 4 .
