PEPPER RELISH

PEPPER RELISH

12 red bell peppers
12 green bell peppers
3-4 jalapeno peppers
14 medium onions
1 quart white vinegar
2 cups sugar or to taste
1 1/2 Tbsp salt

Grind onions and peppers medium fine. Cover with boiling water. Let stand for five minutes; drain. Cover again with boiling water and let stand for ten minutes; drain again. Boil peppers, onions, vinegar, sugar and salt together for 20 minutes or until relish consistency. Seal in sterilized jars. Or can cool and put in ziplock bags for the freezer.
