Potato Apple Hash

2 tablespoons olive oil
1 small onion – cut in small dice
2 large yellow potatoes (about 1 pound) – peeled and cut into small dice
2 tart eating apples – such as Fuji or McIntosh, peeled, cored and cut into small dice
1 tablespoon fresh thyme leaves
1 tablespoon butter
salt and black pepper – as needed

In nonstick 12-inch skillet, heat oil and sauté onions over medium high heat for 5 minutes, or until translucent. Add potatoes; sauté for 10 minutes, or until half cooked. Add apples, thyme and butter; season with salt and pepper. Cook 10 minutes, or until potatoes are lightly browned and cooked through.

NOTES : Tip:

  • Substitute 1 (16-ounce) package refrigerated pre-cooked, diced potatoes for fresh potatoes. Sauté onions; add potatoes, apples, thyme, butter, salt and pepper. Sauté for 10 minutes, or until tender. (Prep time: 10 minutes, Cook time: 15 minutes)
