Potato-Cheese Charlotte

(6 servings)

1/2 cup chopped onions
2 tbsp butter
3 cups grated raw potatoes
2 eggs, beaten
1-1/2 tsp salt
1 tsp paprika
1/8 tsp pepper
1 cup grated sharp cheddar cheese
2 slices of white bread

Preheat oven to 350F. Butter a 1-quart casserole.

Sauté onions in butter until limp. Mix with the potatoes, eggs, salt, paprika, pepper and cheese.

Soak bread in water until soft. Squeeze dry and add to potato mixture. Mix well.

Turn into prepared casserole and bake for 1 hour.
