Quick, Easy and Delicious Chicken and Vegetables
This will satisfy 2 hearty appetites and may be doubled with the addition of 2 more chicken breasts additional vegetables to taste.
2 chicken breasts
2 potatoes, cut in large pieces
2 onions, cut in large pieces
2 small tomatoes cut in quarters
a handful of diced turnip (optional)
1/8 cup of olive oil
freshly ground pepper
fresh basil, chopped or a tbsp. dried basil
In a large casserole dish place all of the above vegetables, drizzle with olive oil and gently toss.
Place skinned chicken breasts on top. Sprinkle basil and freshly ground pepper over all.
Cover and bake in a 400 degree oven 50 to 55 minutes.
Add a salad and you’ve got a complete meal deal!
