Roasted Vegetable-Gorgonzola Gratin

Top roasted potatoes, carrots, onions and green beans with tangy Gorgonzola cheese to make a perfect side dish for a dinner party, holiday celebration or other special occasion.

INGREDIENTS:

A little butter, margarine or oil for greasing baking dish
5 potatoes, peeled and thinly sliced
4 carrots, peeled and sliced in rounds
1 large yellow onion, peeled and thinly sliced
¾ pound (375 g) green beans, toped and tailed and cut into bit-sized lengths
1/3 cup (80 ml) crumbled Gorgonzola or other blue cheese

Preheat oven to 400°F (200°C).

Toss together the prepared vegetables and place them in a greased baking dish or pan. Season with salt and pepper to taste

Bake the vegetables for 15 minutes. Remove the baking dish from the oven and scatter the crumbled cheese over the top of the vegetables. Return the dish to the oven and bake until the cheese is bubbly and the vegetables can be pierced with a fork – about 25-30 more minutes.

Cover with foil and keep warm in a low oven, or serve immediately.
