SAUTÃ‰ED CAJUN CATFISH
Catfish fillets (6 ounces each)
2 T. dried basil
2 T. dried oregano
2 T. paprika
1 T. dried thyme
1/2 to 2 tsp. cayenne pepper
2 tsp. garlic powder
1 tsp. black pepper
1 tsp. salt (optional)
2 to 3 tsp. olive oil
Wash and pat dry fillets.
Combine all seasonings in small jar. Sprinkle both sides of fish
with seasonings and gently rub into flesh. Makes enough
seasoning for 8 to 10 fillets.
Heat 2 to 3 teaspoons olive oil in heavy-bottomed skillet over
medium-high heat. Cook fish fillets about 4 to 5 minutes per side
or until fish flakes easily with fork.
