Sautéed Spinach and Potatoes

Sautéed Spinach and Potatoes

Serves 6.

Ingredients:

1/2 pound new potatoes, cut into 1/2-inch cubes
1 tablespoon olive oil
1/2 cup medium diced onion
1 clove garlic, minced
1 teaspoon paprika
1/8 teaspoon cayenne pepper
• freshly ground black pepper, to taste
1 pound fresh spinach, washed, stemmed and dried
1 teaspoon red wine vinegar
• salt

  1. Sauté the potatoes in oil until browned, about 5 minutes. Add the onion; cook another 2 minutes. Stir in the garlic and sprinkle potatoes with paprika, cayenne and pepper. Toss to coat potatoes. Test potatoes for doneness; continue cooking until potatoes are just tender.

  2. Add the spinach; cook until wilted, about l minute. Stir in the vinegar and salt to taste.
