SPICE RUBBED CHICKEN AND TROPICAL SALSA (restaurant recipe)
4 boneless, skinless chicken breasts, single lobes
1/4 cup of your favorite blackening spice
1 tbsp. Vegetable oil
Tropical fruit salsa:
Â½ cup diced red pepper
1 mango, pitted, peeled and diced
1 kiwi, peeled and diced
1 tbsp. lime juice
1 minced chipotle pepper, optional
salt and pepper to taste
Rub the chicken breasts with the spice rub and coat evenly. Heat the oil in a non stick pan over medium heat and saute the chicken breasts until done, not over cooked.
Meanwhile combine all the salsa ingredients in a bowl and season to taste.
Serve the chicken breasts while warm with the salsa on the side of the plate.
