Sundried Tomato & Sausage Penne
This is a 1-pot dinner that can easily be made in about 30 minutes. While the sausages are cooking, make the pasta, then - throw the rest of the ingredients in and you have a quick, delicious, and nutritious dinner.
1/2 box of whole wheat penne
3 Garlic Sausages, fully cooked and sliced
3 tbsp of fresh, ready-made pesto
2 garlic cloves, minced
3/4 cup of sundried tomatoes, cut into small pieces
freshly grated Parmesan cheese
freshly ground pepper
Cook pasta as per box instructions until al dente. Drain and set aside.
Using the same pot, sautee garlic, tomatoes, and sausage in 1-2 tbsp of olive oil until garlic is fragrant.
Add pasta and pesto, stir well.
Season with freshly ground pepper and serve with freshly grated Parmesan cheese.
