There are probably as many way to prepare swiss steak as there are for chicken. This one is my family’s favorite. We have been using it for years.
Swiss Steak
2 lb. top round steak, cut about 1" thick
1/2 cup plain flour
Salt/Pepper to taste
1 cup sliced onions
1 Tbsp dry mustard
2 Tbsp olive oil
2 cups tomato soup
1 Tbsp brown sugar, packed
2 Tbsp Worcesershire sauce
Mix mustard with flour and pound into steak. Brown in olive oil on both sides. Add salt, pepper, soup, onions, brown sugar, Worcestershire sauce and place in a small roasting pan or electric skillet. Cover and cook @ 325 degrees for 2 hours. Will make its own gravy and we serve over mashed potatoes, rice or noodles.
