thinking summer

It’s not even winter yet and I am tired of the cold and shoveling and just wishing for summertime to roll around again! So I am thinking SUMMER!

Today’s menu is macaroni salad, honey BBQ chicken and honey BBQ spareribs, a side salad, iced tea and strawberry-banana jello with sliced bananas in it, topped with whipped cream.

Macaroni salad - spiral noodles, hard-cooked eggs, finely chopped onion, celery, carrot and sweet gherkins; miracle whip/mustard dressing; sprinkle with paprika and garnish with stuffed green olives.

Split chickens, marinated in olive oil, brown sugar, balsamic vinegar, garlic, Dijon mustard, baked in the oven until just about done, then transferred to the countertop electric grill and finished cooking and basting with honey BBQ sauce - cider vinegar, water, tomato paste, garlic, salt , pepper, Worcestershire sauce, onion, brown sugar, paprika, chili powder, honey.

Ribs are also cooked in the oven and transferred to the electric grill for basting with sauce.

Serve with plenty of napkins!!!
