Tropical Rice

Tropical Rice

4 cups water
2 cups white rice
2 teaspoons butter or margarine
1 teaspoon salt
3/4 cup honey
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 16-ounce can mandarin oranges in juice – drained
1 15-1/2 ounce can chunky fruit cocktail – drained

Bring water to a boil over high heat. Add rice, butter and salt. Return to boil. Stir, cover, reduce heat and simmer 15 to 20 minutes. Place cooked rice in bowl, adding honey and spices while still hot. Add fruit; toss lightly.

Instead of the regular fruit cocktail, I think this might be good with the “chunky tropical fruits” fruit cocktail that at least one manufacturer has come up with. You might want to use TWO cans of this, substituting it for the oranges, also.
