WILD MUSHROOM RICE PILAF

WILD MUSHROOM RICE PILAF
SERVES 4

¾ c. uncooked rice
1 lb. Shitake mushrooms, sliced
2 T. butter or margarine
1 carrot, halved lengthwise, diagonally sliced
1 leek, white and light green parts only, chopped (½ c.)
¼ c. chicken broth
1 t. salt
½ t. pepper
½ t. thyme
¼ t. garlic
2 T. fresh parsley

Cook rice without using added salt and butter, using 1 ¾ c. water. Spray large skillet. Heat pan. Add mushrooms, cook to soften, about 5 minutes. Stir in butter until melted. Add carrot and leek; cook until soft, about 4 minutes. Stir in broth and seasonings; cook 30 seconds. Stir in rice and parsley.
